In large sauce pan sauté onion in oil until translucent. Add ground elk and chop to break up chunks. Cook elk until pink is gone. Stir in remaining ingredients and bring to a boil over high heat. Reduce heat and simmer at least ½ hour. Add salt, pepper, and additional chili powder to taste. Serve with shredded cheese and a dollop of sour cream for garnish.
